Monday, November 16, 2009With the holidays fast approaching, my mind races on what to all those people that deserve something in my life. I can't seem to leave the house without taking along one of these projects. I just wanted to share them again in case you needed some ideas on what to make. Seriously great stash busters. Just one skein is all they take. And a no brainer, so they are great to do while you wait just about anywhere.
For some reason I have made a lot more pairs of toast, then toasty's. For me, I love that toast doesn't have the thumb.
And, those mitts. My favorite yarn to use for all three of these patterns is Classic Elite's Portland Tweed. Not only do I love the tweedy appearance, but the wear of this yarn is FANTASTIC!
All of a sudden, my kids are so into these. The boys want them for when they throw the football. They haven't decided on the color. Libby wants a purple pair. Charlie has also asked for a new thorpe. I foresee a couple more of those being made before Christmas as well.
This was our "cookie of the week" two weeks ago, last week, and my kids asked for them again this week. It has a little "cake like" consistency. You would think they would all be tired of cake!

Pumpkin Cookies:
1 cup canned pumpkin::1 cup butter, softened::1 cup sugar::1/2 tsp salt::1 tsp vanilla::1 egg::2 cups flour::1 tsp baking soda::1 tsp baking powder::1 tsp cinnamon::1 cup cinnamon chips (optional)::1 cup finely chopped pecans (optional)
Preheat oven to 350˚. Blend together the pumpkin, butter and sugar. Mix in the salt, vanilla, and egg. Add the flour, bakings soda, baking powder, and cinnamon, and mix together well. Stir in the chips and pecans. Drop by tablespoons onto cookie sheet. Bake 10-12 minutes.
*The recipe originally called for butterscotch chips, however, we like to use the cinnamon chips.

ReplyDeleteOkay. I've been a lurker for some time and had to comment on today's post. I am all into the fingerless mittens too. They are my go to gifts this year along with a thorpe and a few others. But, my excitement from your post is over the cinnamon chips. We used to get some years ago and my boys loved adding them to pancakes. Then, we could not find them. I thought they weren't made anymore. I am so glad to see someone has them and will investigate getting them in my area. Thank you! Thank you!

ReplyDeleteWhen I first joined Ravelry, one of the first projects I found and wanted to knit immediately was Toasty. I took the pattern with me to my Thursday night knitting group. Since then, every single lady in my group has made multiples of Toast, Toasty and Those Mitts. Many thanks to you, Leslie, for such great patterns. They are the perfect gifts, and really are the perfect size project to wittle down odds and ends left in my stash!

ReplyDeleteYes I to am making the toasty and those mitts for gifts and your pumpkin cookies have been one of our favs since last year when you made them. I add choc chips and my daughters volleyball team was requesting them on a weekly basis.Thanks for all the great inspiration it's always so fun to see what you are up to.
ReplyDeleteI love pumpkin cookies (as well as toast, toasty, and those mitts--you know how I feel about those!). The other day when I made them they totally flopped. I thought I lost my kitchen mojo only to learn the next day the oven died--it wasn't me! When my new oven arrives I'll try out your recipe and start fresh!

ReplyDeleteIt's funny how much kids seem to love pumpkin cookies, isn't it? I have a recipe that has cream cheese frosting... they go in a flash. Even by those who claim they don't like pumpkin!

I am not sure why I have been pain-stakingly trying to come up with quick and easy things to make for people for the holidays...obviously toasts and toasties are the answer... I have always loved this pattern...perhaps there will be some ad nauseum knitting of toast(ies) in my home soon?!

ReplyDeleteToast and Toasty are FABULOUS gifts! I like the thumbless-ness of Toast as well...it's like having long, snuggly sleeves that you can easily yank back when your hands warm up. Thank you again for making those patterns available!
ReplyDeleteI made some cakey pumpkin cookies last week...YUM. I brought most of them into the office because it was too dangerous having them around the house and they were devoured in no time. Now I'm craving them again!

ReplyDeleteI just tried the cookies and they didn't turn out cakey at all - Is it really 1 cup of butter? That seems like a lot - mine spread out all over the pan and were pretty mushy :(

Thanks for the recipe! This weekend I happened to both pick up some cinnamon chips from the store on a whim and preserve some pumpkin butter. Yesterday I realized I had all the ingredients on hand for the pumpkin cookies. I made them and they were a great big hit!
